Tortilla de patata (english)

Tortilla de patata is one of the most known recipes in Spain. It is very easy to do and very tasty. For the basic tortilla you only need potatoes and eggs, but sometimes we add onion. For a tortilla de patata for four people more or less you will need:

- Potatoes (more or less eight medium potatoes).
- Eggs (about 6/8 depending on the size).
- Salt.
- Onion (a half big onion or one medium onion).
- Oil.

First of all we peel the potatoes and wash them. We will cut the potatoes in squares, not very little squares, and salt it. Then we cut the onion in a small pieces.

Now, we prepare the fry pan.
 
 WARNING: If the pan is not a proper pan the tortilla will be a total disastrous. We need a pan of medium size (for being able to flip the tortilla without problems) and, overall, we need a fry pan when the food DON'T stick.

 We put oil into the pan (more or less enought oil for cover 3/4 of the potatoes) and warm it at medium-high temperature. When the oil is ready, we put the potatoes into the pan and cover it with a tap. After a few minutes we add the onion. We have to stir some times.

While potatoes and onion are frying, we whisk the eggs in a bowl. When the potatoes are soft, we switch the fire off and add the potatoes to the bowl. We wisk the mixture and smash some potatoes, but not all.

Now, we put the pan on the fire again at medium-high temperature, but only with a bit oil, just the oil enought to cover the base of the pan. When the pan is warmed, we put all the mixture into the pan, we flatten the top and we cover the pan with a tap. We have to cook it until the base and the borders are set up.

Then, we cover the pan with a falt dish (bigger than the pan) and flip it (the tortilla will be on the dish and you will be able to remove the pan). Immediately, we put the pan on the fire and put the torilla into the pan again for setting up the other side (just bend the dish and let the tortilla slides until dropping onto the pan). This time, the tortilla will set up in less time.

 Finaly, we flip the pan again and it's ready to eat!
